Apparently this is pretty bizarre, because I'm told apple crumble is one of the most delicious things ever. But I've just never liked this dessert. When I was young, we had an apple tree growing in the backyard. Not the best apples, but good cooking apples. My mum would often make apple crumble, or apple stew, for my brother and I. She'd offer us apple crumble and custard, which my brother would happily eat, while I'd ask for the apple crumble and custard, hold the apple crumble. It's just something about cooked fruit - I'd rather have a fresh apple!
I've been pretty crazy busy with work lately, and my boyfriend Kai has been extremely supportive - happily taking on all the household chores and everything necessary to keep me functioning. He's also been really patient about the fact that he hasn't got to spend much time with me on weekends! I wanted to make him a nice treat to say thank you, and he loves apple crumble - plus I thought it was a nice gesture to make something that was clearly not for me!
The great thing about this recipe is that it's small too, so you don't end up with crumble for days and days. Of course, there is the option of halving the recipe, but I never seem to do that! I must get it from my mum - she's always calling me and saying she made too much of something if we want any food, and I say, "Why didn't you just make less?" Her response is always, "The recipe told me to make this much!" So true!
The other thing to add is that this isn't too complicated a recipe. Most of the ingredients I already had in the cupboard - in fact, all I bought was an apple. Then I made most of it in front of the TV! Simple, and, apparently, delicious!
RECIPE - serves 1-2
2 tablespoons self-raising flour
1 tablespoon coconut
1 tablespoon brown sugar
1 tablespoon butter, melted
1 large cooking apple
2 tablespoons sugar
1 tablespoon water
1. Preheat oven to 190 degrees.
2. Grease a small oven proof dish.
3.. Peel, core, and thinly slice apple. Lay slices in dish.
4. Sprinkle apple with sugar and water.
5. In a large bowl, mix flour, coconut and brown sugar. Slowly add the butter until the mixture resembles bread crumbs. Cover the apple with bread crumb mixture.
6. Bake for approximately 30 minutes.
