In retail you have managers come and go - but for the majority of the three years I was there I worked with the same manager and assistant manager, and they were definitely my favourite managers in my retail journey. They were fantastic people - no bullshit, no dramas, no stupid gossip that you get in a lot of retail environments - great coaches, both with work and also with general life advice, and really supportive people.
My assistant manager was crazy for pistachio ice cream. I'd never tried pistachio ice cream before - I'd actually never had anything pistachio, so I credit her entirely with the love I now have for pistachios. Because once I tried some of her tub of pistachio ice cream, once I tried one creamy, delicious, nutty spoonful, I was hooked.
You can now see why, when I found this recipe for pistachio fudge, I got pretty excited! As you guys have probably learnt by now, I'm all about easy, quick recipes where possible, and this was a winner! I had to make this for a work event on a Friday, and I don't have a lot of free time in the evenings - this probably took me half an hour, max? And the majority of that time was spent sifting, because my normal sifter was in the wash.Let me know what you guys think - this is a winner for me now!
Just a note on the instant pudding mix - I've only ever seen vanilla and chocolate at the normal supermarkets; I bought pistachio flavour from USA Foods - I'm lucky enough that this store is near me, but you can pay to have items shipped from there too!
RECIPE
3/4 cup white chocolate chips
85 grams (6 tbsp) butter, chopped
1/3 cup water
1 package pistachio instant pudding mix
3 cups icing sugar mixture
1/2 cup shelled pistachios
1. Line a 20cm x 20cm square baking tin with foil.
2. In a microwave safe bowl, add chocolate, butter and water and microwave for 30 second intervals, stirring each time, until butter and chocolate are fully melted.
3. Stir in dry pudding mix until completely combined.
4. Stir in sugar, one cup at a time, until fully combined.
5. Stir in pistachios.
6. Pour into baking tin and smooth top. Refrigerate until set, about 2-3 hours.
7. Remove fudge from pan and cut into squares.
