1 cup caster sugar
1 cup thickened cream
1 tablespoon salt
Place the sugar in a saucepan. Cool, stirring, over medium heat for 5-7 minutes until sugar melts fully. Keep a careful watch over the sugar once it starts melting, as soon as it's fully melted take it off the stove so it doesn't burn.
With the saucepan off the heat, slowly and carefully pour in the cream. If you do this too fast the cream will spit everywhere so be careful! As soon as you've poured the cream in, put back onto low heat and stir. Keep stirring until the cream is fully mixed into the sugar.
Add the salt and stir.
Remove from heat and pour into jar. Allow to cool. Store in the fridge for up to 5 days, bring to room temperature before serving or heat in the microwave to use in coffee, on dessert etc.
